Fried pumpkin flowers

Ingredients for 4 people:

16 of the freshest pumpkin flowers
150 gr. Wheat flour
2 eggs lightly beaten
Salt and pepper to taste
Sunflower oil

Preparation

Carefully wash the pumpkin flowers inside and out: remove the pistils and leave the flowers to dry on absorbent kitchen paper; while they are drying combine the water, flour, eggs, salt and pepper to make a thin batter; dip the flowers in the batter one at a time and fry them in hot oil; quickly remove them, lay them on absorbent paper and serve straight away as an starter.

 
 

Sparkling Ginger Ale

Ingredients for 2:

2 cups of peeled and roughly sliced root ginger
2 cups of sugar
2 cups of water
_ liter of sparkling mineral water
2 yellow lemons cut into quarters
4 mint leaves

Preparation:

Mix the ginger, sugar and water in a casserole dish and bring it to the boil, simmering until it has reduced by half; allow it to cool. While the syrup is cooling, remove the pieces of ginger and dip them in sugar, place them on a baking sheet and put them in the oven at 225 ºF for 3 hours; they should be dry and slightly tender.
In a tall glass with ice place one mint leaf and one part of ginger syrup to 7 parts sparkling mineral water; squeeze the lemons and add them to the drink, mixing well, decorate the glass the lemon slices, mint leaves and one slice of candied ginger. Serve ice cold.
