The Bodega Tagonius, established in June 2000 by the Foxá hotel group with 100% Spanish investment, gets its name from the Latin translation of Tajuña, the name of the river that the owners wanted to honor by locating their cellars on its banks; the river runs through the area of Arganda in the Madrid municipality of Tielmes, and creates a microclimate in the zone of Tielmes and Carabaña to the east of Madrid, where the estate’s vineyards are planted. The laboratory is the jewel in the crown of the complex; equipped with the latest technologies, it is here that the quality of all the estate’s products is controlled – oils, vinegars, wines – and of all the first class materials that pass through the company. As it uses the most advanced technology, the laboratory also undertakes work for other companies as well as from the official laboratories of the Community of Madrid.
Reova, extra virgin olive oil and Tonavi, different types of vinegars
The facility has an oil press equipped with the latest technology for the processing of the finest quality extra virgin olive oil with the capacity to process 3,000 tons of olives per year. Under the name Reova, the company presses four varieties of olives: Picual, Arbequina, Hojiblanca and Cornicabra. They also produce extra virgin olive oil certified as kosher.
The estate also has a vinegar production facility located in the house’s old wine cellars, which also incorporates the latest technology in the manufacture of wine vinegar such as the high yield acetator Frings. From the grape varieties malvar and garnacha, the estate produces white and red wine vinegars, flavored vinegars and balsamic vinegars which are all well established in the market. In addition to the Spanish market, these vinegars are also
distributed overseas, including in Panama, the United States, Bulgaria and South Africa. The vinegar facility’s production capacity is around two million bottles per year and the products are marketed under the name Tonavi in glass bottles of 250 cc and 500 cc.
The wine production facilities were designed and built using the latest technology, in order that they would be among the best anywhere; all of the production equipment is made of stainless steel and its cellars use the finest woods anywhere in the world of wine. The wine production of Bodegas Tagonius is of high quality, such as its Tinto Roble (aged 5 months in the cask), Crianza (aged 9 months in the cask), Reserva (aged 12 months in the cask) and Selección Especial (double aged for 18 months in the cask).
All of these reds are among the choicest varieties of the certification known as Denominación de Origen Vinos de Madrid, (Syrah, Cabernet Sauvignon, Merlot and Tempranillo) and have joined the club of those with 90 Parker points, a classification for the finest wines in the world. Tagonius wines are imported into Belgium, Germany, Holland, Denmark, Canada, the United States and Panama.
Bodegas Tagonius also makes kosher wines under the supervision of Madrid’s Chief Rabbi Moises Bendahan under the label Tikvah. Producing this type of wine requires precision and care as kosher is made according to the requirements of the Jewish faith; to achieve this certification, wines have to be produced right from the vine under the control of a qualified member of the Jewish religion. Kosher means “pure”, pure right from the beginning; to achieve this the vineyard must be at least four years old and the vines must have grown in isolation; the soil must be left to rest every seven years and the last application of organic fertilizer must be at least two months before the harvest; once the grapes are sufficiently ripe, they are harvested with great care and must arrive at the winery whole and healthy. Only one person of the Hebrew religion may handle and press the grapes to produce the wine must; all the machinery and facilities used in the wine making process must have been cleaned under the strict supervision of the rabbi. During the wine making process, carried out using stainless steel cubes rather than wooden casks, only bentonite clay may be used to clarify the wine. Once the wine has been put into new glass bottles, 5% is sold to benefit the poor and if the rabbi believes that all the requirements have been fully met, he will apply the Kosher seal. Tikvah is a good Tempranillo, full of color and aromas, predominantly of red and black fruits and fine wood (vanilla) with hints of milk. In the mouth, succulent and smooth, with a luxuriance that does not fail to please. Heavy with fruit and balanced with a fine make up. This wine is destined to be enjoyed in Jewish communities around the world.
